Key Responsibilities
- Know the main menu, the daily changes, functions and specials cold
- Bring new dish ideas, and put forward menu items when the chefs invite you
- Get your station ready for daily trade, functions and special orders
- Stay on top of stock quality and quantity; raise any shortfall with the Head or Sous Chef
- Send out every component properly cooked, on standard and on time, sticking to the recipes and the Food Control Plan
- Keep prep and service areas clean, prep raw ingredients and stock to demand while keeping waste down, show junior staff the right way and report maintenance problems
