Sous Chef

Modern classics, premium proteins, seafood and pub-style dishes go out of this Port Melbourne kitchen, and the Head Chef needs a right hand. A professional hospitality venue in Victoria is adding an experienced Sous Chef to its kitchen leadership team.

The employer wants proof of real-world ability: owning service when it gets busy, lifting the team and putting out quality food consistently. It is about pairing genuine culinary experience with a long-term role, with input into operations, food quality, team leadership, stock and menu development.

South African chefs should keep employment letters ready, as experience will be verified and a performance review is part of sponsorship consideration.

Key Responsibilities

  • Act as the Head Chef's right hand in daily kitchen leadership and operations
  • Own kitchen performance when service is at its busiest
  • Lead, coach and mentor kitchen staff, from juniors to seniors
  • Cook and send out dishes of consistently high quality, holding presentation, portions and recipe standards
  • Organise prep so service runs efficiently
  • Handle ordering and supplier needs, track stock and keep inventory in good shape
  • Keep food costs under control and cut needless wastage
  • Uphold food safety, hygiene and cleanliness
  • Pitch menu and seasonal ideas
  • Make sure modern classics, premium proteins, seafood and pub-style dishes are executed consistently
  • Work hand in hand with management and front-of-house, and help build a professional, respectful and productive kitchen

Requirements & Eligibility

  • Demonstrated background as a Sous Chef or an experienced senior chef
  • Strong grounding in a high-volume pub, bistro, restaurant or similar kitchen
  • Proven hands-on cooking and prep skills
  • Demonstrated ability to run a kitchen team through busy services, with strong communication and leadership
  • Strong grasp of food quality, presentation and consistency, plus sound food safety and hygiene practice
  • Experience with stock control, ordering, food costing and managing wastage
  • Works efficiently under pressure
  • Reliable and professional about kitchen responsibilities
  • Can demonstrate and verify genuine culinary employment, and candidates with documented, verifiable chef experience are encouraged to apply
  • Willing to take part in the required performance review for sponsorship consideration
