Sous chef and Head chef

Italian food, pizza and pasta are the strengths this Wollongong kitchen is looking for, and it wants a leader to match. The professional hospitality operation is open to an established Head Chef or an experienced Sous Chef ready for the next step.

The job goes well past the stove: you will shape team development, kitchen performance and day-to-day operations, and set the tone for consistency and high standards. Bring real culinary discipline, initiative and a style of leadership that stays hands-on during service.

Chefs moving from South Africa with a partner and children should start planning the family side of the move early.

Key Responsibilities

  • Run the kitchen so service flows smoothly, stepping in to take charge of service whenever needed
  • Set the bar for food quality, plating and consistency, and keep it there
  • Develop, motivate and lead the chefs, cooks and junior staff, training them in prep methods, recipes and standards
  • Coordinate prep and service across all sections, working hands-on through busy, high-volume periods
  • Write and refine menus, recipes, specials and seasonal dishes
  • Watch portions, food costs, waste and profitability, and manage purchasing, stock rotation, inventory and suppliers
  • Help plan schedules, rosters and labour, and support management with kitchen planning and operational decisions
  • Keep food safety, hygiene and workplace practices effective, find ways to make workflow more efficient and keep the kitchen clean and well structured
  • Work hand in hand with front-of-house and management, and build a respectful, positive team that performs

Requirements & Eligibility

  • Proven background in a Head Chef, Sous Chef or other senior culinary role, with a track record of leading and developing a kitchen team
  • Committed to consistent, high-quality food and confident in a fast-moving professional kitchen
  • Solid grasp of food costs, stock control and managing waste
  • Sound knowledge of food safety and hygiene
  • Communicates effectively and leads teams well
  • Organised, dependable and professional
  • Flexible about weekends and rotating rosters
  • Italian cuisine experience is strongly regarded, and pizza and pasta preparation experience is highly regarded
  • Relevant culinary qualifications or equivalent industry experience are advantageous
  • Candidates who need visa sponsorship may be considered, subject to eligibility, and sponsorship is available for the right candidate
