Restaurant Manager

Produce from the farm, a fine dining room in Red Hill and a floor team that looks to you before every service. That is the setting for this Victorian Restaurant Manager role on the Mornington Peninsula.
The venue wants an established front-of-house leader who can prove it: verifiable work history, relevant qualifications and real leadership. Sponsorship is part of the picture, but the focus is on finding someone who brings trusted know-how, polished service and tight operational discipline.
You will shape how guests experience the restaurant, build up the floor team and keep the standards a premium venue expects. Line up your references and wine qualification papers before you apply.
Key Responsibilities
- Run the floor during service, leading from the front and setting a consistent, high bar every shift
- Model the refined, attentive and professional service the room is known for
- Look after bookings, table plans, guest preferences, VIP arrangements and special requests, staying in touch with guests from arrival to departure
- Brief the team before service on the priorities for the day
- Train, coach and mentor floor staff to lift their service skills
- Work hand in hand with the kitchen so the whole restaurant runs smoothly
- Draw up weekly rosters around bookings, events, seasonal swings and operating needs, tracking labour and helping plan staffing
- Control drinks and front-of-house stock, handle purchasing and keep an eye on wastage, breakage and usage to manage costs
- Keep the operating systems in order and help produce accurate daily reports
- Look for ways to make service more consistent, efficient and satisfying for guests
- Make sure food safety, hygiene, WHS and responsible service standards are upheld
- Keep the venue compliant with its procedures, licensing conditions and the relevant regulations
Requirements & Eligibility
- Demonstrated time as a Restaurant Manager, Assistant Restaurant Manager, Maître d' or senior front-of-house leader
- A solid grounding in fine dining, premium restaurants or other high-end hospitality settings, where international hospitality experience is highly desirable
- Proven at leading and growing front-of-house teams
- Sound knowledge of how a restaurant runs, including labour planning, stock control and managing costs
- Confident wine knowledge, with experience presenting and explaining international wine lists; a minimum WSET qualification is required
- Excellent English communication; other European language skills will be advantageous
- Calm and professional when serving guests and leading staff
- A sharp eye for detail and a firm commitment to premium hospitality standards
- Able to supply proof of relevant employment history, qualifications and professional experience so it can be verified
- International candidates with suitable experience may be considered for sponsorship
