Key Responsibilities

  • Take charge of the kitchen from opening prep through service, setting prep timetables to match expected trade
  • Turn out authentic dishes from Singapore and Malaysia to a steady commercial standard, showing real wok, noodle, rice, curry and sauce skill
  • Make sure every plate tastes, looks and is portioned the same each time
  • Pitch workable new dishes and menu ideas
  • Inspect produce as it arrives and insist that it is prepped the correct way
  • Run ordering, receiving, storage and rotation of stock, and watch usage, portion sizes, spend and waste
  • Direct the kitchen staff day to day and teach them how prep, cooking and kitchen routines are done
  • Make sure cooks and front-counter staff talk to each other clearly
  • Police food safety, hygiene, temperatures and allergens
  • Send takeaway orders out right and within the required timeframes
  • Maintain equipment, make staff follow safe operating steps and deal with any operating or equipment fault
  • Run a kitchen that stays spotless, well ordered and professional

Requirements & Eligibility

  • Proven professional time as a Head Chef, Sous Chef or senior chef
  • Strong practical Singaporean and Malaysian cuisine skills, including proven wok cooking, noodles, rice dishes, curries and sauces
  • Has cooked commercially in a busy takeaway, restaurant or quick-service kitchen
  • Can show you keep quality steady when the orders pile up
  • Has led, supervised or trained kitchen staff before
  • Practical, well-organised kitchen manager
  • Knows the food safety and hygiene standards for commercial kitchens
  • Experienced in stock control, food costing and keeping wastage down
  • Gets on well with both kitchen and service staff; relevant commercial cookery qualifications are desirable
  • Able to back up your experience and qualifications with genuine evidence, and free for full-time work, weekends and public holidays included as required
  • Must satisfy applicable requirements for employer sponsorship and visa eligibility
