Head Chef

Restaurant service, breakfasts, conferences, weddings and private functions: this kitchen covers a lot of ground, and it needs a leader who can take ownership of all of it. The role suits an established Head Chef or an experienced Sous Chef with the practical skills, leadership and commercial sense to run a busy hospitality kitchen.
Cooking ability matters, but so do team leadership, kitchen organisation, cost awareness and consistent delivery. You will have input into menus, develop the kitchen staff and keep standards high across every service and event.

Key Responsibilities
- Look after restaurant and breakfast service, plus catering for conferences, weddings and private functions
- Carry overall responsibility for the kitchen each day
- Lead, supervise and develop the kitchen team, and prepare rosters to suit operational needs
- Plan and deliver menus to a consistently high standard, including seasonal menus and food promotions
- Keep quality, presentation and consistency right across every food service
- Handle food purchasing, stock levels and kitchen inventory
- Watch food costs and keep waste to a minimum
- Uphold food safety, HACCP and workplace health and safety standards
- Coordinate with other hospitality departments so service runs smoothly
- Review how the kitchen works and introduce improvements
- Keep the kitchen clean, organised and professional
Requirements & Eligibility
- Proven professional experience as a Head Chef or experienced Sous Chef, with a strong commercial kitchen background
- Relevant experience in hotels, resorts, restaurants or similar hospitality settings
- Able to lead and manage a kitchen team and to train and develop staff
- Experience creating menus and putting them into practice
- Hands-on knowledge of food costing and kitchen budgets
- Experience with purchasing, stock control and inventory management
- Knowledge of HACCP and Australian food safety practices
- Able to handle multiple services and functions in a busy setting
- Good organisation and time management, with strong communication and team leadership
- Proven ability to work independently and take ownership of kitchen operations
- Professional experience that can be backed up with suitable employment documents
- Able to meet applicable Australian employment and sponsorship requirements
