Key Responsibilities
- Run the kitchen from day to day, coordinating every part of prep and service
- Lead, train and back up the kitchen crew from the first prep list through to the last cover
- Hold food quality, consistency and plating to a high level, keeping a close eye on portions and production standards
- Keep the workflow tight and efficient in a busy casual dining setting
- Cook and supervise dishes using a wide mix of techniques
- Take charge of prep planning, stock levels, storage and ordering
- Make sure food safety, hygiene and HACCP requirements are met, and keep the kitchen clean, organised and professional
- Bring ideas to the menu and to new dishes
- Shape a positive, accountable kitchen culture that performs at a high level
- Work a flexible roster covering evenings, weekends and public holidays
Requirements & Eligibility
- A Certificate III or Certificate IV in Commercial Cookery, or an equivalent recognised qualification
- At least 3–5 years in commercial kitchens, with roughly 1–2 years of that as a Head Chef or senior Sous Chef
- Shown ability to lead and coordinate a professional kitchen team
- Solid knowledge of modern cooking methods across a range of culinary styles
- A track record of steady, consistent results when service is busy
- Good leadership, communication and organisational skills
- Sound understanding of food safety legislation and HACCP procedures
- Professional presentation and a high standard of personal conduct
- Flexible availability across a seven-day roster
- A current CV, professional referees who can be contacted, and reliable supporting information for your identity, qualifications and relevant employment history
- Sponsorship may be available for an eligible candidate who meets the applicable requirements
