Head Chef & Cook

A new restaurant in Ballarat, Victoria is building its kitchen from scratch, with an Italian-inspired menu at the centre. It needs a Head Chef to set the standard and shape that menu, plus experienced Chefs, Cooks and Kitchen Hands to round out the opening crew.

Key Responsibilities

  • Run and coordinate the kitchen and the people in it, training and guiding the team as it grows
  • Cook and plate Italian and European-inspired food to a high standard, keeping taste, quality and presentation steady
  • Help with menu planning, recipes, specials and seasonal dishes
  • Handle prep, purchasing, ordering and stock rotation, watching stock levels, food costs and kitchen resources
  • Help plan labour and keep the kitchen running efficiently
  • Keep kitchen procedures accurate and consistent, and meet food safety, hygiene and workplace standards
  • Stay quick and composed when service is busy
  • Keep the kitchen clean, safe and in order
  • Keep the kitchen and management talking, and help build a positive, professional team

Requirements & Eligibility

  • Relevant commercial kitchen experience that can be verified
  • Head Chef applicants: minimum 3 years of senior chef or Head Chef experience, plus strong leadership and communication skills
  • Other roles: past experience as a Chef, Cook or Kitchen Hand
  • Able to show your cooking skills and professional background
  • Italian or modern European cuisine experience is highly regarded
  • Relevant culinary qualifications or recognised trade training are advantageous
  • Know-how in food costing, ordering, stock control and running a kitchen
  • Keeps standards high when the pace is fast
  • A firm grasp of food safety and hygiene
  • Dependable, organised and professional, and works well in a kitchen team
  • Available for the required hospitality shifts, evenings and weekends included
  • Employer sponsorship may be available for eligible applicants, subject to skills, experience and applicable visa requirements
