Costs, rosters, suppliers and plates leaving the pass on time all land on your desk in this senior kitchen job in Albany, in WA's Great Southern. An established hospitality venue needs a Head Chef with a sharp commercial eye and proven leadership.
You will run day-to-day kitchen performance, grow and support the culinary team, keep food quality consistent and keep spending under control, all while the kitchen runs safely and efficiently. There is also room to shape menus, sharpen kitchen systems and help set where the venue's food goes next.
Chefs with a South African trade certificate should expect skills to be assessed again for Australia.
Key Responsibilities
- Own the daily running of the kitchen and its performance through every service
- Lead the brigade and sort out each day's staffing needs
- Keep food production, quality and consistency high, with a close eye on portions and presentation
- Design and roll out efficient kitchen systems, standard recipes and operating procedures
- Handle purchasing and supplier relationships, including ordering and stock rotation
- Keep track of inventory and stock movement
- Hold food costs down and cut avoidable waste
- Manage labour costs and rosters, and keep the kitchen on budget and on financial target
- Write and refresh menus and seasonal specials
- Hire and onboard new kitchen staff, then train and mentor the team
- Run staff performance management and development reviews
- Make sure the kitchen meets food safety and HACCP requirements and workplace health and safety standards
Requirements & Eligibility
- Proven time as a Head Chef or Senior Sous Chef, running a busy restaurant kitchen
- Strong operational and financial management, with demonstrated experience controlling both food costs and kitchen labour costs
- Leads teams and manages staff well
- Has developed and implemented kitchen systems
- Can handle suppliers and purchasing
- Excellent grasp of food safety and HACCP principles
- Strong understanding of modern Australian cuisine, and able to build quality menus that are commercially viable
- Solves problems well, stays organised, communicates clearly and keeps standards high under pressure
- Suitable international candidates may be eligible for visa sponsorship
