General Manager

Picture a premium Italian restaurant that does not yet have a team, a floor plan or a rulebook. That is the starting point for this General Manager in Gregory Hills, Sydney NSW: a newly established venue that needs a senior hospitality leader to turn it into a fully structured, high-performing operation.

You will shape how the place runs from the start: setting up the FOH structure, hiring the opening crew, putting systems in place, keeping costs in check and holding service to an exceptional level. Expect wide responsibility across the whole operation. The employer wants proof of what you have done before, through real venue results, team leadership and past operational responsibility, so gather evidence of the venues you have run.

Key Responsibilities

  • Own the pre-opening build-up and get the venue operationally ready
  • Design workable FOH structures, floor plans and service flows
  • Hire, interview, onboard, train and develop a strong opening team
  • Set clear service expectations and performance standards, and coach managers and staff into a consistent service culture
  • Write SOPs and practical daily procedures, including opening and closing systems
  • Lead large FOH and bar teams through daily service, staying hands-on on the floor while keeping commercial oversight
  • Build rosters, track staffing needs and control labour spend, wage costs and productivity
  • Run the POS and operational systems, Deputy included
  • Oversee the premium wine, spirits and cocktail side of the business
  • Track beverage costs, GP, pricing and margins
  • Handle purchasing, manage supplier relationships and negotiate for better commercial results
  • Watch service quality, guest experience and operational performance, spotting gaps and bringing in fixes that work
  • Keep RSA, WHS and restaurant compliance in order

Requirements & Eligibility

  • A strong track record in senior restaurant or hospitality management, provable through a credible career history
  • Experience running premium or high-volume restaurant operations
  • Has opened or set up a new hospitality venue before
  • A verifiable history of the venues you have managed, launched or led operationally
  • Experience leading substantial FOH and bar teams, with strong recruitment, staff training and leadership skills
  • Hands-on understanding of how a restaurant floor runs
  • Strong knowledge of wine, spirits, cocktails and beverage service, plus experience managing beverage GP, costing, pricing and margins
  • Practical experience with rosters, labour budgets and wage control
  • Experience using POS and restaurant management platforms
  • Strong purchasing and supplier negotiation skills, with solid commercial awareness and operational decision-making
  • Sound understanding of RSA, WHS and restaurant compliance, and able to build systems and procedures from scratch
