More than 12,000 meals a week, seven food and beverage outlets and a kitchen workforce of over 60: that is the scale this Sydney hospitality group is asking a senior chef to run. The group is well established and wants someone with a record of leading big kitchen operations and getting the same results across several venues.

Cooking skill alone will not get you there. The role calls for team leadership, sound commercial calls, firm operational control and steady delivery. Your history in senior kitchen roles will need to be backed by employment and career documents that can be verified.

Executive chefs from South Africa should line up employer letters that confirm their senior roles and the size of the teams they ran.

Key Responsibilities

  • Run kitchen operations across all seven food and beverage outlets
  • Lead and grow a kitchen workforce of more than 60, including hiring and developing staff at every level
  • Keep food quality, plating and service consistent in every venue
  • Steer menu development and roll new menus out across the operations
  • Control purchasing, inventory, food costs and labour spend, keep an eye on budgets and help lift profitability
  • Put solid kitchen systems, procedures and performance standards in place
  • Oversee food safety, workplace health and safety and regulatory compliance
  • Work with venue managers and senior leaders to hit operational targets
  • Find practical gains in productivity, workflow and cost control
  • Hold high standards in a large, fast-moving operation while building a positive, accountable kitchen culture

Requirements & Eligibility

  • Proven background as a Group Executive Chef, Executive Chef or in an equivalent senior culinary role
  • Demonstrated track record running large kitchen teams, complex operations and high-volume food production
  • Strong grasp of food costing, budgets, labour control and purchasing, with demonstrated commercial insight into kitchen profitability
  • Experience developing menus and keeping food standards consistent
  • Proven at recruiting, training, mentoring and keeping kitchen staff
  • Strong people-management, communication and organisational skills
  • Can lead at a strategic level and still get hands-on when needed
  • Multi-venue hotel or hospitality background is highly regarded
  • Knows food safety, workplace health and safety and regulatory requirements
  • International recruitment or sponsorship experience is advantageous
  • Can provide verifiable evidence of relevant employment and senior responsibilities; sponsorship is available for eligible candidates
