Lunch and dinner services at a busy Surfers Paradise restaurant need a second-in-charge who keeps the line disciplined. The business, on Queensland's Gold Coast, is hiring a Sous Chef or Senior Chef to lift service performance, kitchen organisation and team standards.

You will partner with the Head Chef, coordinate the brigade, protect food quality, run prep and keep each day moving efficiently. The right person has a proven record in professional kitchens, wants more ownership of service and leads by example, with consistent service and strong discipline to show for it.

Key Responsibilities

  • Run prep and service coordination for lunch and dinner
  • Back the Head Chef in managing day-to-day kitchen activity
  • Own the consistency of food quality and plating
  • Lead and supervise the brigade on the pass, train staff and reinforce set kitchen procedures
  • Plan prep so service flows efficiently
  • Watch stock levels, rotation and pars, help keep food costs down and cut avoidable waste
  • Help build rosters and allocate labour sensibly
  • Uphold HACCP, food safety and WHS procedures and keep the kitchen clean, structured and ready for service
  • Liaise with front-of-house on service needs, spot problems mid-service and fix them fast and professionally
  • Hold productivity and quality through high-pressure periods and help build a positive, disciplined, collaborative kitchen

Requirements & Eligibility

  • Proven background as a Sous Chef, Senior Chef or experienced Chef in professional commercial kitchens
  • Track record of handling prep and heavy service periods
  • Has led or supervised a team, and can train, guide and support other kitchen staff
  • Working knowledge of HACCP, food safety and WHS requirements
  • Hands-on understanding of stock control, food cost management, and kitchen staffing and labour needs
  • Communicates well and stays organised
  • Sharp eye for detail and kitchen cleanliness
  • Holds standards steady during high-volume service
  • Comfortable working alone or within a team
  • Professional, dependable and accountable, with a positive attitude and strong problem-solving
  • Available on a 7-day roster, including weekends and public holidays
  • Prepared to take ownership of how the kitchen performs and the standards it keeps
