Busy services, seasonal menus and a team that needs a steady hand: this Commercial Chef job is based in Stanley, in the Devonport and North West region of Tasmania.
The kitchen wants someone with a proven record in professional food prep and service, solid technique and the discipline to take charge when the dockets pile up. You will help run the kitchen day to day, keep food standards consistent, contribute to menu development and keep the place efficient and positive.
Your qualifications and work history must be clearly proven and verified. South African chefs should get certified copies of certificates and detailed reference letters sorted early.
Key Responsibilities
- Cook a wide range of dishes to set standards, using professional techniques and staying consistent from service to service
- Plate meals with care for look, portion size and quality, checking food from prep right through to the pass
- Plan the prep needed before each service and keep mise-en-place up to scratch across your sections
- Run a section on your own during busy services and help keep things moving when volumes are high
- Help plan menus, seasonal dishes and new creations
- Assist with buying, ordering and stock management
- Store food correctly, rotate stock and watch temperature controls
- Track how ingredients are used and cut waste where you can
- Keep the kitchen spotless and your personal hygiene high, following Australian food safety, hygiene and workplace safety requirements
- Work with kitchen and front-of-house staff, communicating clearly so food goes out accurately and on time
- Train and guide junior cooks, passing on cooking and prep methods
- Stick to the kitchen's recipes, procedures and standards and help build a respectful, dependable, customer-focused culture
Requirements & Eligibility
- Recognised Certificate III in Commercial Cookery or equivalent qualification
- Minimum five years of relevant commercial kitchen experience, with strong professional cooking you can demonstrate
- Able to provide evidence of your qualifications and employment history
- Confident working independently in a commercial kitchen, with a proven ability to run a section during service
- Practical knowledge of menu development and seasonal dishes
- Understands stock control, food storage and managing waste in a kitchen
- Strong grasp of food safety and hygiene procedures
- Keeps quality consistent under pressure
- Communicates well and works as a team, and can supervise, train or support junior kitchen staff
- Well organised, good with time and detail-focused
- Professional attitude and committed to workplace standards, and available for evenings, weekends and public holidays
- Must meet applicable Australian employment and sponsorship eligibility requirements
