Key Responsibilities
- Cook Japanese food that is authentic, consistent and well presented
- Make sushi and sashimi with professional prep and knife technique, and handle seafood prep and cold-section mise en place
- Cook hot Japanese dishes on the grill, fryer, pan and yakitori sections
- Choose, prep and handle ingredients to professional kitchen standards, with tight portion control and consistent plating
- Have the day's prep finished before service starts
- Store food properly, keep it fresh and rotate stock
- Meet food safety, hygiene and sanitation rules at all times, keeping prep and cooking areas clean, organised and ready for service
- Work fast and accurately when service volumes are high, coordinating with other kitchen staff so it runs smoothly
- Move between kitchen sections and operational needs when asked
- Keep professional standards, discipline and attention to detail, and help the wider kitchen team with daily operations
Requirements & Eligibility
- A minimum of 3 years of professional experience in Japanese cuisine
- A proven work history in Japanese restaurants, sushi bars, izakaya or similar commercial kitchens
- Demonstrated hands-on skill in sushi, sashimi or Japanese hot food preparation, with strong knife skills and seafood handling experience
- Able to show genuine practical culinary experience relevant to this position
- Has worked in a fast-paced professional kitchen and keeps quality and consistency through busy services
- Good understanding of food safety, hygiene and professional kitchen practice
- Reliable, punctual and professional
- Communicates strongly and works well as part of a kitchen team
