You have moved past just cooking. Now you lead a brigade, hold a high bar for every plate and help set the kitchen's direction. A premium hospitality business in Melbourne, Victoria, wants an accomplished Senior Chef for its kitchen leadership team.
The team is experienced, and detail, consistency and technical excellence are non-negotiable. Your background, qualifications and career achievements weigh heavily in selection, and the employer prefers candidates who can clearly show high-end culinary experience. Time in Michelin-starred or comparable international fine-dining kitchens is highly regarded.

Key Responsibilities
- Run the kitchen brigade through prep and service, coaching and growing the junior and commis chefs
- Hold every plate to an exceptional bar for taste, look and consistency
- Back up the Head Chef with the day-to-day running of the kitchen
- Help shape menus, develop recipes and bring new dishes from idea to the pass
- Watch preparation and cooking all through service, and make sure every cook sticks to kitchen procedures
- Look after ordering, stock levels and rotation
- Help with costing so kitchen resources are well controlled
- Keep operational and compliance records up to date, and hold food safety, hygiene and workplace health standards
- Link up smoothly with front of house during service
- Give developing chefs ongoing hands-on teaching and mentoring
- Spot ways to make the kitchen run better and cook better, and model a professional, respectful and disciplined kitchen
Requirements & Eligibility
- Minimum 5–7 years' experience in professional kitchens
- Minimum 2–3 years' experience in a senior chef, sous chef or supervisory capacity
- You have proven time in fine dining, Michelin-starred or equivalent high-end kitchens, and your career shows steady progression and growing responsibility
- You cook with strong technique across contemporary methods and follow current food trends and sustainable kitchen practice
- You are a proven leader who can train, mentor and motivate a kitchen team
- You know food safety, hygiene and kitchen compliance thoroughly
- You communicate and organise well, and you stay composed and keep standards high in tough services
- You have handled stock control, kitchen costing and inventory
- Relevant culinary qualification, apprenticeship or equivalent professional training preferred
- You are driven by quality, consistency and getting better all the time
- Currently working in Australia with a valid visa, and able to give suitable evidence of your experience and qualifications
- Must satisfy applicable requirements if considered for employer sponsorship
