Asian flavours, a premium kitchen in the Blue Mountains and a seat at the leadership table: a hospitality business in Katoomba, New South Wales wants a trade-qualified Sous Chef with proven expertise and a real passion for Asian fusion cuisine.

You will lead in the kitchen, drive service, shape new menu items and lift team performance alongside experienced senior chefs. Your qualifications, commercial kitchen history and hands-on skill must all stand up to scrutiny.

The role offers recognition for your culinary experience in Australia and a path to more responsibility. Chefs relocating from Mzansi with a partner and children should start family planning early.

Key Responsibilities

  • Keep the kitchen running effectively during service and lead the team so work flows in an organised way
  • Supervise prep and check every dish meets the quality and presentation standard
  • Work with the senior culinary leaders on menu development, new dish ideas and menu planning, and suggest ways to improve kitchen performance
  • Bring deep knowledge of Asian flavours, ingredients and cooking methods, keeping recipes, portions, flavour profiles and plating consistent
  • Coach, train and mentor junior chefs and developing staff
  • Assign duties to suit operational needs and service demand, and help with rostering and deploying kitchen staff
  • Coordinate with front-of-house so service stays efficient
  • Track stock, ordering and ingredient supply, and help with food costing, portion control and cutting waste
  • Keep kitchen procedures accurate and consistent, follow food safety, hygiene and workplace health and safety rules, and run a clean, safe, well-organised kitchen
  • Help build an accountable, high-standard team culture and support senior management in reaching operational, culinary and guest satisfaction goals

Requirements & Eligibility

  • Trade-qualified Chef holding relevant recognised qualifications
  • Minimum 2 years' experience as a Junior Sous Chef or Senior Chef de Partie, with strong hands-on work in a commercial restaurant kitchen
  • Proven experience with, or substantial exposure to, Asian or Asian fusion cuisine, and good knowledge of Asian ingredients, flavours, prep methods and techniques
  • Turns out high-quality food consistently under demanding service
  • Has previously supervised or supported other kitchen staff
  • Solid understanding of kitchen operations and coordinating service
  • Knows ordering, stock control, food costing, waste management, menu planning and portion control
  • Strong leader and communicator
  • Treats food safety, hygiene and workplace safety professionally
  • Able to work rotating shifts, weekends and public holidays included
  • Willing to relocate and build a working life in Australia
  • Reliable, professional and team-minded
