Key Responsibilities

  • Cook a wide range of quality dishes for both à la carte services and functions, using the right technique for each plate
  • Work hand in hand with the Head Chef on menus and daily kitchen needs
  • Help plan, develop and cost menus
  • Choose, check and prepare fresh ingredients to the expected quality, and keep up your knowledge of local and regional produce and how to handle it
  • Store food correctly, rotate stock and handle ingredients by the book
  • Help with ordering stock and controlling inventory
  • Keep an eye on prep so dishes stay consistent in quality and presentation
  • Cut food waste through careful prep, portion control and storage
  • Hold strict hygiene and food safety standards across the kitchen
  • Stay effective when restaurant and function services get busy, helping coordinate workflow so service runs smoothly
  • Guide junior kitchen staff when needed and hand out prep and kitchen tasks that match each person's ability
  • Spot ways to make the kitchen more efficient and pass those suggestions on
  • Work with the wider hospitality team so guests have an excellent experience

Requirements & Eligibility

  • Certificate IV in Commercial Cookery, or a recognised qualification that is equivalent
  • At least 3 years of relevant experience in professional kitchens, with strong commercial cooking and food prep skills
  • Background in quality dining settings
  • Fine dining experience is advantageous
  • Experience in regional or rural hospitality is advantageous
  • Sound knowledge of food safety, hygiene and kitchen procedures
  • Comfortable working with fresh, seasonal produce
  • Close attention to the quality, presentation and consistency of food
  • Works efficiently in a fast-paced kitchen, juggling several tasks and managing time well
  • Stays composed and makes sound decisions under pressure
  • Communicates clearly and pulls together with a team
  • Can help supervise junior staff and delegate tasks to them
  • Takes high hospitality standards seriously and behaves professionally
  • A genuine interest in building a long-term culinary career in Australia
  • Must satisfy the relevant Australian employment and visa requirements; visa sponsorship is available for suitable overseas candidates who lack Australian work rights
