Mise en place done before the doors open, then a steady run of Japanese dishes through the evening. A growing hospitality team in East Melbourne, Victoria wants a Japanese Cuisine Chef with proven kitchen experience, reliability and a professional mindset for its night-time service.

You need real experience in commercial Japanese cooking and pride in turning out the same high standard every shift. Skill is only part of it: the employer also wants someone dependable, respectful and positive who works well with others.

Note that this employer asks for valid Australian work rights, and sponsorship is only for the right onshore candidate if a suitable full-time role opens up.

Key Responsibilities

  • Cook and plate Japanese dishes to the kitchen's set standards, following its recipes, methods and procedures
  • Get mise en place and prep done before service, and handle prep tasks efficiently in the evening
  • Keep food quality, presentation and portions consistent
  • Back up the kitchen team when service gets busy
  • Keep food hygiene and kitchen cleanliness at a high level, storing and handling ingredients properly
  • Help with stock prep and keep the kitchen organised
  • Communicate clearly with the chefs and team, taking instructions, feedback and training on board positively
  • Help keep the kitchen respectful, cooperative and productive, and be reliable across every rostered shift

Requirements & Eligibility

  • Minimum 2 years of relevant Japanese cuisine or professional kitchen experience
  • Proven commercial kitchen background with practical cooking skills, and a genuine understanding of Japanese food preparation and kitchen operations
  • Able to work well in a fast-paced service setting, staying calm and organised under pressure
  • Strong attendance, reliability and personal accountability
  • Professional attitude and good discipline at work
  • Respectful communication and strong teamwork
  • Keen to learn, develop professionally, take on training and adapt to workplace requirements
  • Demonstrated commitment to building a stable, long-term career in hospitality
  • Valid Australian work rights required; sponsorship is available for the right onshore candidate if a suitable full-time position becomes available
