Chef

Hospitality · Bathurst, Blue Mountains & Central West NSW, Australia · Full-Time · $80,000/yr

Expect a kitchen where Japanese-inspired plates go out all service long and every one of them has to look and taste the same as the last. That is the daily reality for this Full-Time Chef joining a hospitality business that is growing in NSW.

The owners want a cook who has done real time on the line in a commercial kitchen, turns up dependably and has the technique to keep the food right when the dockets pile up. You will be expected to stay calm when it gets hectic and help keep service professional.

If you trained or qualified back home in Mzansi, have certified copies of your cookery papers and references ready before you apply.

Key Responsibilities

  • Cook Japanese-inspired dishes and follow set recipes, procedures and portion controls so each plate meets the house standard
  • Get the daily prep done, checking and readying ingredients so everything is set before service starts
  • Use the right cooking methods to keep results, flavour, presentation, portion sizes and food quality consistent
  • Move between kitchen sections during prep and service, timing cooking so meals reach the pass on schedule
  • Sort out prep priorities when the kitchen is flat out
  • Pitch in with ideas for new dishes, seasonal specials and menu changes
  • Keep your station clean, tidy and ready for service, sticking to food safety, hygiene and workplace safety rules
  • Track how ingredients are used, flag stock needs and help with ordering so supplies stay at the right level
  • Talk clearly with the other chefs and front-of-house staff
  • Help build a kitchen culture that is disciplined, positive and professional

Requirements & Eligibility

  • At least 3 years of relevant experience in a professional kitchen, including proven work in a commercial restaurant setting
  • A culinary, commercial cookery or equivalent qualification that is relevant to the role
  • Experience with Japanese cuisine will be viewed favourably
  • Solid hands-on knowledge of cooking and food prep, plus an understanding of professional food safety and hygiene practice
  • Able to stay consistent and pay close attention to detail during a busy service
  • Good planning, organisation and time-management skills
  • Able to work well without someone watching over you all the time, and to work with the broader kitchen and restaurant team
  • A professional attitude that puts reliability and quality first, with good communication at work
  • Available for rotating shifts, which include evenings, weekends and public holidays
  • Able to show verifiable proof of your relevant qualifications and experience
  • Must meet Australian employment and visa eligibility requirements
  • Visa sponsorship is available for a candidate who is appropriately qualified and eligible
