The employer wants an experienced butcher who can prove hands-on skill across commercial preparation and retail production, from the first cut through to value-added lines and quality checks. You will keep product quality steady, use processing machinery safely and help run a clean, efficient workplace.
Butchers holding a South African trade certificate should expect skills to be assessed again for Australia.
Key Responsibilities
- Break down carcasses of different meat types, then cut, trim, mince and portion them accurately
- Make sausages and other processed lines, seasoning, smoking or marinating products where needed
- Prepare cuts to gourmet retail presentation standards and set up attractive displays
- Run slicers, mincers and other processing machines
- Weigh, pack, price and label products correctly
- Check meat and finished goods for quality and consistency
- Fill customer orders accurately and quickly
- Watch stock levels and help with inventory, keeping production, stock and inventory records up to date
- Clean and look after knives, machines and prep areas
- Follow food safety, hygiene and workplace safety rules
- Keep the workplace clean, orderly and compliant
Requirements & Eligibility
- Certificate III in Meat Processing or a relevant qualification
- Minimum 3 years of relevant professional experience
- Proven carcass breakdown experience
- Strong commercial knife skills and meat-cutting ability
- Has made sausages and other meat products
- Confident using slicers and meat-processing machinery
- Sound knowledge of food safety and hygiene, and an understanding of workplace health and safety rules
- Has managed stock and inventory
- Follows customer specifications and order details, with a close eye on quality, accuracy and presentation
- Can show real, relevant industry experience that can be verified
