Breakfast Sous Chef

Early starts, eggs and a busy brunch rush on the NSW South Coast. A growing hospitality business in Huskisson wants an experienced Breakfast Sous Chef to run its morning kitchen and work hand in hand with the Head Chef.
You will lead a small crew, shape the breakfast menu and tighten up kitchen systems so each service runs smoothly. Your experience, leadership and ideas will genuinely count here.
The role is permanent and full-time with regular days off, in a beautiful coastal spot that suits a chef ready for the next career step and a lifestyle change. If you are moving with a partner and children, start planning schooling and housing early.
Key Responsibilities
- Run the breakfast kitchen day to day, leading prep and service to a high standard
- Work with the Head Chef on how the kitchen runs and where the food is heading
- Supervise up to five breakfast chefs and train and develop the juniors
- Help create and refine breakfast menus and seasonal specials, keeping quality, presentation and portions consistent
- Organise daily prep so all mise en place is done, and keep the kitchen flowing during busy services
- Handle stock levels, orders, rotation and wastage
- Uphold food safety, hygiene and cleanliness, and look for ways to improve kitchen systems and processes
- Help the wider kitchen team when needed and keep the culture respectful, motivated and professional
Requirements & Eligibility
- Minimum 2–5 years' experience as a Sous Chef or in a senior chef position, including proven time in breakfast or brunch-focused kitchens
- Strong knowledge of modern Australian breakfast and café-style food
- Experience supervising or leading a kitchen team, and able to train, mentor and motivate junior chefs
- Strong food prep and presentation skills, with good knowledge of food safety and kitchen hygiene requirements
- Experience with stock control, ordering and keeping food waste down
- Well organised, manages time well and communicates and leads with confidence
- Performs well in busy services and is happy working early morning shifts
- Professional, reliable and team-minded, with a commitment to a long-term career in the Australian hospitality industry
